Guppies are cute and colorful fish! You could get a 5 or 10 gallon tank and get a small group of guppies. My advice would be to get only males. If you get females you will have tons of babies! Also, males are usually a tad smaller than females and more colorful.
Platies are great fish too. I like the small sunrise platies, they are yellow/orange and grow to a size of about 1.5 inches. Again, get males. Both of the fish I mentioned are livebearers. They give birth to live young. But they have tons of babies!

EDIT: I also thought of another peaceful schooling fish, although they aren’t as colorful, they are fun to watch. Zebra danios or Leopard Danios can be kept in groups in a 5-10 gallon tank. I believe you can keep danios and guppies together, though you would need a 10 gallon for all those fish. Another option, like someone mentioned, was neon tetras. Although guppies and neons together wouldn’t be the best combo. Guppies like aquarium salt, and neons don’t tolerate salt very well.
Get a betta and a small school of neon tetras. Those will be both colorful, interesting to watch and easy to care for. You would only need a small tank, 5-10 gallons, a small filter and heater and a couple of easy to care for, low light plants and you would have a very nice, picturesque tank that would delight the eye.

neon tetras are beautiful, they are schooling fish, so they are amazing to watch
